The Japanese apricot normally is harvested while green, mainly for the sake of storage and transportation to pickle it, but also for exporting to Japan or drying it to become the raw material for prunes.
The Japanese apricot in Taiwan is cultivated on the hillside next to Central Mountain Range. The main cultivation areas include Nantou County, Taichung County, Tainan County, Kaohsiung County, Taitung County, etc. Taitung has the second biggest output in Taiwan, and Donghe Township has the largest cultivation area.
The taste of the Japanese apricot is sweet and sour, but it is an alkaline food which contains citric acid, malic acid and succinic acid. It can refresh the body and promote one's appetite when put in food.
